Salsa Verde Huevos Rancheros
A new spin on this classic Mexican breakfast dish.

Ingredients:



1) 2 tbls vegetable oil
2) 4 DEER CREEK Salsa Verde Tortillas
3) 1 (14 oz) can refried beans with green chilies
4) 1 tsp. butter
5) 4 eggs
6) 1 cup shredded Cheddar cheese
7) 8 slices bacon, cooked and crumbled
8) 1/2 cup salsa or pico de gallo (optional)
9) green onion, chopped

Steps:



1) Heat oil in a small skillet over medium-high heat.
2) Fry tortillas one at a time until firm, but not crisp.
3) Remove to paper towels to drain grease.
4) Combine the refried beans and butter in a microwave-safe dish.
5) Cover, and cook in the microwave until heated through.
6) When tortillas are done, fry eggs over easy in the skillet adding more oil if necessary.
7) Place tortillas onto plates, and spread a layer of beans on them. Top with cheese, a fried egg, crumbled bacon, green onions and salsa or pico
